Hi there!
Today I would like to share a very easy recipie, her name in spanish is "En Blanco", it´s about a fish soup and usually we eat this soup in many occasions but one it´s when we have a stomach pain or a gastroenteritis, because this recipie is so light. Today I ate it at night, I like to have something warm in my stomach with this cold winter of Boston.
Ingredients:
-1 medium size onion.
-1 tomate.
-1 potatoe.
-2 gloves of garlic.
-1/2 white fish, I used today pollack, but you can try hake or the one that you like.
-olive oil.
-salt.
-parsley.
-lemon juice.
-6 cups of water.
Elaboration:
-Peel the potatoe and cut it in thick slices.
-Peel the onion and cut it in slices.
-Peel the gloves of garlic.
-Cut the tomate in small pieces.
-In a pot add the water, the potatoe, the onion, the gloves of garlic, a hint of salt and a splash of olive oil, let them boil for 30 minutes.
-Add the fish cut in some medium pieces, no very small because the fish could shred. Let it boil for 15 minutes more.
-Now it´s time to serve it in a bowl adding a hint of salt, a splash of lemon juice and a little bit of parsley.

"Spaniard meat balls in almond sauce or albóndigas en salsa de almendras"
Hi everyone! My sister sent me this recipie because she knows it is one of my favorite recipies that I love to eat when a was a girl, this recipie drove me to those old days. I hope you enjoy the recipie. I would like to add the spaniard name to the recipie as well, in this case you can learn some spanish and when you go to a spanish restaurant you should know what you like, hehe!!
Ingredients:
- 400 gr ground meat, half of pork and half of veal. It's possible to do the meat balls with chicken as well.
- Fresh parsley or 1/2 tbsp of dry pasley
- Ground pepper
- Some whole peppercorn
- 4 gloves of garlic
- ½ small onion
- 1 slice of bread ( italian bread or french bread would be the most similar to the spaniard bread)
- 1 glass of white wine
- 1 glass of water
- Flour
- Bread crumbs ( plain)
- 1 Egg
- 1 Glass of whole milk
- Olive Oil
- Safron or something similar to give some color to the sauce
- A full fist of almonds
- One basil leave.
-Salt
Elaboration:
- In a bowl add to the meat some salt and some ground pepper.
- Chop the onion, the gloves of garlic and the parsley very small. Add all to the meat.
- Add one beaten egg, the glass of milk and the bread crumbs.
- Knead the meat with the rest of ingredients until you get a homogeneus dough. Add more bread crumbs if need it to make the dough consistency.
- Make a medium size meat balls with the dough.
- Coat the meet balls with flour.
-In a fried pan with olive oil sauté the meat balls. It´s not neccesary that the meat balls are well done because the meat balls will be cook slowly later.
-When we´ll finish to fry the meat balls, we´ll kept them in a plate with kitchen paper to dry the oil.
- In other fried pan fry the gloves of garlic without the skin. When they will be golden brown keep them in a plate.In the same oil fry the almonds carefully because if they get burnt the sauce will be bitter, and keep them with the garlic. In the same oil fry the slice of bread.
-Put together the slice of bread, the gloves of garlic and the almonds in a bowl. Add the glass of wine, the glass of water and the safron and beat with the hand blander until the dough will be thin.
- Finally put the meat balls in a saucepan and add the sauce that we made before. Add the leave of basil and some whole peppercorns and simmer over medium low heat during 15 minutes. Be careful that the sauce won´t get too thick.
Ready to take delight!!

Ensaladilla Rusa ( spaniard name) or Russian Salad
Welcome everybody!!
I would like to share an easy recipe from my country, the ensaladilla Rusa or Russian salad, that we use to eat like a snack or tapa in some bars with a cold beer or sangria or whatever you like. Although the name of this recipe is Russian Salad, it is a Spanish salad. I don't know why we call it this way. Perhaps some day I will try to find the information about the origin of the name of this recipe, but for now... let's get to the recipe, ok!!! I would like to dedicate this recipe to my friend Kristen and her mother who loves my recipe!!
Ingredients:
-3 medium potatoes
-1 or 2 carrots.
-1/2 can of green peas or frozen peas. If you use frozen, boil them and keep some for decoration.,
-2 eggs.
-1 can of tuna fish (I prefer the brand chicken of the sea, green can)
-15 green olives oil
-salt
-6 shrimps ( optional)
-roasted red peppers
-mayonnaise
Preparation:
-Boil the potatoes and when they are cooked, peel them.
-Peel the carrots and boil them. When they are cooked, cut in small pieces. Keep some for decoration
-Boil the eggs and cut into small pieces, reserving one of the yolks for decoration.
-Boil the shrimps or just buy them already cooked.
-Cut the roasted red peppers like fingers, reserving some for decoration
-Cut the olives in slices. Reserve some for decoration.
-Take a medium boll. Mash the potatoes with a fork and mix with four or five Tbsp of mayonnaise and salt, depending on your taste. Add the olives, shrimp, boiled eggs, roasted red pepper, tuna fish, and carrots. Mix everything, adding the green peas last (they break very easily, so we add them in the last moment).
-Put a layer of mayonnaise on top of the mixture. Top it with the decoration ingredients. Let your imagination fly and make a great design!
