Ensaladilla Rusa ( spaniard name) or Russian Salad

Welcome everybody!!
I would like to share an easy recipe from my country, the ensaladilla Rusa or Russian salad, that we use to eat like a snack or tapa in some bars with a cold beer or sangria or whatever you like. Although  the name of this recipe is Russian Salad, it is a Spanish salad.  I don't know why we call it this way.  Perhaps some day I will try to find the information about the origin of the name of this recipe, but for now... let's get to the recipe, ok!!! I would like to dedicate this recipe to my friend Kristen and her mother who loves my recipe!!

Ingredients:

-3 medium potatoes
-1 or 2 carrots.
-1/2 can of green peas or frozen peas.  If you use frozen, boil them and keep some for decoration.,
-2 eggs.
-1 can of tuna fish (I prefer the brand chicken of the sea, green can)
-15 green olives oil
-salt
-6 shrimps ( optional)
-roasted red peppers
-mayonnaise

Preparation:

-Boil the potatoes and when they are cooked, peel them.
-Peel the carrots and boil them. When they are cooked, cut in small pieces. Keep some for decoration
-Boil the eggs and cut into small pieces, reserving one of the yolks for decoration.
-Boil the shrimps or just buy them already cooked.
-Cut the roasted red peppers like fingers, reserving some for decoration
-Cut the olives in slices. Reserve some for decoration.
-Take a medium boll. Mash the potatoes with a fork and mix with four or five Tbsp of mayonnaise and salt, depending on your taste. Add the olives, shrimp, boiled eggs, roasted red pepper, tuna fish, and carrots.  Mix everything, adding the green peas last (they break very easily, so we add them in the last moment).
-Put a layer of mayonnaise on top of the mixture.  Top it with the decoration ingredients.  Let your imagination fly and make a great design!
